Tomatoes


Every year my mother grows tomtoes and she doesn’t do anything to get them. Im usually pretty jealous. This year we decided to grow a garden together we tilled and planted seed. Went and got some seed starts and it looked beautiful! We planted the bigger plants at her house since she had more space and the plants that werent so big at my house. Litte did we realize how the ground at her house was like clay and the reason her plants did so well when she didnt do anything is because they were like ground cover. The whole summer of pulling weeds and wondering why everything looked like it was dying. Being so disappointed with the couple tomatoes we got afer all the work.

Since we are trying to be more self substaining this didnt work. We started buying cases of tomatoes. These tomatoes are called canning tomatoes or seconds! Let me tell you they are amazing ! I paid 11$ for a half bushel which is a box of tomaotes! Kept going back and ended up only getting 3 boxes (my freezer was full). I wanted to see how far these 3 cases would get me.

This weekend I had to process them due to getting our chicken next weekend. I found my recipes and got to work. I roasted them and turned them into 5 pints of salsa, 7 quarts of pasa sauce, 3 pints of pizza sauce, 6 pints of bbq sauce, and 2 jelly jars of ketchup. I am going to write down how long it takes me to go through these and know for next year that even if I don’t have a ton of space I can still go to the farm market for seconds and make up for what i wasnt abke to produce! so even if you don’t have the space there is always this option.
